For starters it was super fresh because I picked the artichokes myself while attending the Castroville Artichoke Festival field tour last weekend. I learned there are three sizes of artichokes: Primary (the big artichokes you see at the grocery store) grow at the top of a main plant stalk. Secondary (aka small) grow from the stalks coming off the main stalk. And tertiary (aka baby artichokes) grow off the stalks of the secondary artichokes.
I was able to pick a few small secondary and some of the tertiary artichokes from a field in Castroville and brought them home to have a go at cooking them. I decided to saute my artichokes and toss them with pasta so I looked up "how to sautee baby artichokes" instructions on Google.
Because it only takes about three to four minutes to saute the thin petals and slices of artichokes and about ten minutes to boil the pasta (5 minutes to bring the water to a boil and 5 minutes to boil the pasta) I put a pot of water on the stove top to heat as I peeled the chokes.

I chose using a combination of thin spaghetti, half classic white flower pasta and half whole wheat, for this dish.

I used three baby artichokes for this serving for one.

To prep the artichokes:

I began by pulling off the exterior green petals by hand. With babies you want to peel them all the way down until you hit the bright yellow petals. Stop there and trim the the stalk with a knife or potato peeler to remove the green exterior of the stem.
Also trim off the bottom of the stalk and top 1/2" or so of the tip.
I then cut the artichoke off at the base of the petals then sliced it in half and quarters lengthwise. One had the start of a fuzzy choke so I simply removed it by pulling out the petal directly behind it and the fuzz came with it.
I then sliced the tiny heart into thin pieces.

Tip: Once peeled, artichokes will brown faster than a banana so if you want to preserve their color you should drop them in lemon or vinegar water as soon as you've peeled them. I was going to cook them so quickly I skipped this step.

I sauteed my artichokes in grape seed oil.

Heat a pan to medium high heat, add the baby artichokes, and saute them for 3-4 minutes. I skipped lidding the pan and flipped and stirred them occasionally, every minute or so. They picked up a beautiful, caramelized, golden brown color as they cooked. When they were done I turned off the heat, moved the chokes to the side of the pan and waited a minute or two for the pasta to finish cooking.

After draining the pasta I put a pat of butter in the pan, let it melt then tossed the pasta in it moving the artichokes from the side of the pan, into the pasta. If I had olive oil I would have skipped the butter but I didn't have any olive oil on hand.

The final step was to sprinkle some freshly ground black pepper and truffle salt on the pasta while it was still in the pan.

It only took ten minutes to whip up this dish of artichoke pasta

It was delicious and so easy to make! This is definitely my new favorite way to enjoy artichokes. The flavor is lighter and sweeter than when I've used the jarred varieties. Instead of being strongly flavored like a pickle, they're much more subtle and nuanced.

Baby artichokes are definitely a treat when they're in season, which is right now, during the month of May. So if you see them at the store or at your local farmers market pick some up and give them a try!

Physicists have trapped and cooled exotic particles called excitons so effectively that they condensed and cohered to form a giant matter wave.

This feat will allow scientists to better study the physical properties of excitons, which exist only fleetingly yet offer promising applications as diverse as efficient harvesting of solar energy and ultrafast computing.

"The realization of the exciton condensate in a trap opens the opportunity to study this interesting state. Traps allow control of the condensate, providing a new way to study fundamental properties of light and matter," said Leonid Butov, professor of physics at the University of California, San Diego. A paper reporting his team's success was recently published in the scientific journal Nano Letters.

Excitons are composite particles made up of an electron and a "hole" left by a missing electron in a semiconductor. Created by light, these coupled pairs exist in nature. The formation and dynamics of excitons play a critical role in photosynthesis, for example.

Like other matter, excitons have a dual nature of both particle and wave, in a quantum mechanical view. The waves are usually unsynchronized, but when particles are cooled enough to condense, their waves synchronize and combine to form a giant matter wave, a state that others have observed for atoms.

Scientists can easily create excitons by shining light on a semiconductor, but in order for the excitons to condense they must be chilled before they recombine.

The key to the team's success was to separate the electrons far enough from their holes so that excitons could last long enough for the scientists to cool them into a condensate. They accomplished this by creating structures called "coupled quantum wells" that separate electrons from holes in different layers of alloys made of gallium, arsenic and aluminum.

Then they set an electrostatic trap made by a diamond-shaped electrode and chilled their special semiconducting material in an optical dilution refrigerator to as cold as 50 milli-Kelvin, just a fraction of a degree above absolute zero.

A laser focused on the surface of the material created excitons, which began to accumulate at the bottom of the trap as they cooled. Below 1 Kelvin, the entire cloud of excitons cohered to form a single matter wave, a signature of a state called a Bose-Einstein condensate.

Other scientists have seen whole atoms do this when confined in a trap and cooled, but this is the first time that scientists have seen subatomic particles form coherent matter waves in a trap.

Varying the size and depth of the trap will alter the coherent exciton state, providing this team, and others, the opportunity to study the properties of light and mater in a new way.

Parents were furious after a principal suspended students for organizing bicycle ride to school. WOOD's Marc Thompson reports.

Prank or proud moment? For the 64 high school seniors in Walker, Mich., who marked their last day of classes by riding bikes -- with a police escort and the mayor in tow -- it was all about school pride and staging a "prank" with no damage. But to Kenowa Hills High Principal Katie Pennington -- who had no idea what was coming -- it was a prank that could have hurt someone and tied up traffic.

Pennington on Wednesday did apologize for overreacting but, needless to say, the incident has been the talk of the town, population 24,000 -- and even overtook a routine school board meeting Tuesday night as parents spoke up to criticize Pennington.

"The disruption to the classroom, the disruption to the school day, was not these kids," Keri Whip, the parent of one senior, told the meeting, according to NBC affiliate WOOD-TV. "It was the principal."

Seniors "came up with a very cool thing to do that you guys as administrators could have gone and run with this and made this a positive thing with the media," said another parent, Cheryl Carter.?

Wednesday afternoon, the school district released an apology on Pennington's behalf:

?Yesterday, I made a mistake and sincerely regret my actions. Did I overreact? In retrospect, of course I did. My first response to learning of our high school seniors riding bikes to school on busy roads was to fear for their safety, and I responded in kind. I apologize to the students, their parents, and the community for a reaction that blew this incident out of proportion and called into question the character of our students. Our senior class has demonstrated leadership, unity and school pride throughout this school year. My actions and emotion overshadowed what should have been a very positive senior activity. I have learned much from this experience and do not consider myself infallible.

?I now applaud the students for their foresight in contacting the police department to ensure the safety of their senior surprise. I only wish the police department or others who may have known about this would have let us in on the surprise but, of course, it wouldn?t have been a surprise had we known in advance.

?I look forward to our second ?Senior Walk? and our Commencement for this senior class. It will be a celebration of their accomplishment and recognition of their creativity.?

After the incident Tuesday morning, Pennington ushered the seniors into an auditorium, where part of her tirade was recorded on a cellphone video. In it she refers to the busy streets nearby and to the traditional senior walk through school on the last day of classes.

"If you and your parents don't have sense enough to know your brains could end up splattered on Three Mile and Kinney, Fruit Ridge, then maybe that's my responsibility," WOOD-TV reported her as saying. "... Get your butts home. You're not participating in senior walk today."

The seniors said they were also told they might not be allowed to walk with their class at graduation, but the school district later said that was not the case.

Class president Zac Totten,?who helped organize the ride, did speak up for Pennington, who did not attend, and thanked the school for backing off the graduation threat.

"I really want to apologize to Mrs. Pennington," he said. "She's taken a lot of heat for this and this is a great school, and this school is getting some bad press."

Superintendent Gerald Hopkins told the meeting that the district would have supported the bike ride if students had alerted officials?ahead of time.

Senior students?said having told the school would have defeated the purpose of their non-violent "prank."

The one-day suspension will not count against students, Hopkins said, and those who missed final exams will be able to make them up.

And the senior walk has been rescheduled to May 30.
