Armed with a supply of Highlander Condensed Milk I thought I?d already made my mind up how I would use it.. a few batches of good old Edmonds Condensed Milk Biscuits. BUT then I clicked through to the Nestle site and saw the array of delicious recipes all requiring condensed milk and immediately decided it was time to try something new. I have always wanted to make a cheesecake but thought it would be too time consuming or difficult. Then I saw the recipe for Lemon Cheesecake. Requiring only 6 ingredients, this looked like a challenge I could take on. And I wasn?t disappointed!

Using condensed milk made this recipe so simple, and gave the cheesecake that delicious unmistakeable flavour we all know and love (and who can resist taking to the can with a teaspoon afterwards to scrape up all the extra bits, hah) The result was a roaring success with flatmates and colleagues alike.. there have been a lot of requests for a repeat performance! I think this will be my new go-to dessert recipe for dinner parties and social events in future!

Highlander Condensed Milk is without a doubt one of my favourite baking ingredients. No recipe that includes it seems to fail, and the warm sense of nostalgia I get when using it is makes me enjoy it even more. This is a 5 out of 5 product without a doubt.
